Lucky Charms Cupcakes – Fun St. Patrick’s Day Treats

How ambition often gets the best of us but with these easy Lucky Charms Cupcakes, you will be hail a hero in no time. Super easy to put together and it’s using ingredients you probably already have in your pantry, so no fuss there. 

St. Patrick’s Day isn’t something I grew up celebrating, my exposure to it was limited to an excuse to drink while in college. However, after having kids and having them invited to parties and volunteering at their classroom parties, it has slowly wormed its way in. Though I won’t make a day of it, I am not opposed to enjoying the delicious treat that accompanied the day. And since the universe works in mysterious ways, a dish I grew up enjoying with my family, happens to fit right into the St. Patrick’s day theme; that dish is this corned beef stew recipe with rice. It’s a super quick fix for busy weeknight dinner and a perfect way to celebrating without truly celebrating.

Now that we’ve gotten the niceness out the way, let’s dive into the steps in bringing these bad boys to life. It looks complicated but assembling these Lucky Charms Cupcakes is actually fairly simple. Get the little ones to help and it can be a good family friendly activity, saving you time and giving them a bit of responsibility in the process. And as a reward for you, you can treat yourself to a nice glass of Boozy Guinness Extra Stout Ice Cream Float, if you can survive with your children in the kitchen then you’ve earned it. No judgment here, I know what it’s like having lots of cooks in the kitchen, it’s probably one of the reasons why I sometimes do some of my work while they are in school or sound asleep. Anyway, enough about me.

Tools used to make these Lucky Charms Cupcakes: 

Stand Mixer – Why? Because even the most inexperienced baker needs a mixer to achieve utmost greatness. If you’re not ready to make the commitment, opt for an electric hand mixer instead, this one is my fav. 

Measuring Cups– When baking its important to measure accurately, this little nuance matters when it comes to the difference between having a moist and dry cake. 

Cupcake and Muffin Pan – Now that you’ve secured a stand mixer and measuring cups, it’s only right to start making muffins for breakfast. 😉

St. Patrick's Day Cupcake - Get the party started with these easy Lucky Charms Cupcakes, a nice and fun St. Patrick’s Day treats sure to liven up your party. 

Lucky Charms Cupcakes

  • 12 cupcakes made with white cake mix
  • Green Food Coloring
  • White Frosting
  • Oreo’s
  • Gold Food Color Spray
  • Lucky Charms Marshmellow

Directions

  1. Preheat oven to 350 degrees
  2. Line a 12 cup cupcake pan with liners
  3. Prepare the cake mix according to directions. Add green food coloring and mix until the batter is completely green. Pour into the cupcake pan
  4. Bake for 15 minutes
  5. Let cool
  6. Frost the top of the cupcakes with this cupcake frosting or use any regular white frosting
  7. On a piece of parchment paper, lay down 12 Oreo cookies. Spray them with the gold food spray I use this one – make sure to cover both sides and let dry
  8. Place each Oreo on top of each cupcake to represent a gold coin. Place Lucky Charms marshmallows on top of the rest of the frosting
  9. Enjoy!!
