Growing up the only beer I saw on TV and in commercials were Guinness, Harp, Star, Gulder, and Heineken. My Dad didn’t drink but when we go to parties these were the drinks that were served. So Guinness reminds me of home and in a strange way, my childhood.
Every once in awhile, I have cravings for something different, right now it is this Guinness Ice Cream Float. Who knew blending the thick, creamy and rich stout beer with vanilla ice cream will give such luxurious yet simple drink; well we blended it and here is the result. Stout beer isn’t for everyone; this is coming from someone that isn’t a fan of beer because it’s an acquired taste, yet this recipe works. The vanilla ice cream surprisingly cuts down on the bitterness of the beer.
I say all that to say, if you’ve been intimidated by the strong taste of stout beer, for your next happy hour give the little guy a chance and try it with this recipe, you might end up singing a different tune. Yes, this definitely isn’t the ice cream float you grew up with and it doesn’t pretend to be.

Guinness Extra Stout Ice Cream Float
- 2-3 scoops vanilla ice cream
- 1 bottle Guinness Extra Stout beer
- Optional - chocolate sauce
- Add the vanilla ice cream to your favorite serving glass.
- Pour the Guinness chocolate stout beer on top of the ice cream.
- For an extra chocolate flavor, top the float off with a drizzle of chocolate sauce.
