Recipe | Cinnamon Swirl Buttermilk Muffin with Crumb Topping

It’s 3 days till Christmas, the kids are off from school, my husband and I have taken the next couple of weeks off to spend some quality time as a family as we head into the New Year. This mini end of the year time off is usually spent reflecting on what we enjoyed about the current year and what our goals are for the upcoming here. We don’t usually focus on the bad, we envision a better or more promising new year while baking, watching movies and making crafts with the kids. This Cinnamon Swirl Buttermilk Muffin recipe was something we made with the kids a couple of times this year, it makes a great snack and an equally filling breakfast when accompanied with a glass of milk or a cup of tea/coffee.

Ingredients
  • 1 3⁄4 cups all-purpose flour
  • 1⁄2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1⁄4 teaspoon salt
  • 1 1⁄4 teaspoon ground cinnamon
  • ½ cup soften butter
  • 1 cup buttermilk
  • 1⁄4 teaspoon vanilla extract
  • 2 eggs
  • Crumb Topping Ingredients:
  • ¼ cup brown sugar, packed
  • ½ tsp. cinnamon
  • 2 tablespoons butter, cold
Instructions
  1. Preheat oven to 350 degrees F. Line muffin pan with liners or grease nonstick muffin pan
  2. In a large bowl, combine the flour, sugar, baking soda, salt, buttermilk, cinnamon, eggs, butter and vanilla extract
  3. Mix well with wooden spoon
  4. Fill the greased muffin tins halfway and sprinkle with crumb topping
  5. Top with remaining batter and sprinkle with leftover crumb topping
  6. Bake for 18-25 minutes or until toothpick comes out clean
