Strawberry-Kumquat Salad
Although strawberry season just wrapped up, I couldn’t let summer pass by without sharing this Strawberry-Kumquat Salad with honey dressing. It’s a simple, quick and easy recipe that would be perfect for summer entertaining. You can make it for a crowd, just double or triple the recipe. If you’re like my cousin, wondering what Kumquat is, it’s best prescribed as a tiny, grape-like orange. They’re tart and sweet, just pop them in your mouth like you would grapes.
Strawberry-Kumquat Salad with Honey Dressing
Ingredients
Salad
- 2 cups strawberries, quartered
- 1 cup kumquats, thinly sliced
Honey Dressing
- 2 tsp honey
- 2 tbsp lemon juice
- 3 tbsp extra virgin olive oil
- 1 tsp crushed coriander seeds
- a few sprigs of mint for garnish
Direction
- In a small bowl, mix lemon juice, oil, honey and coriander seeds, whisk until well combine and set aside
- In a large bowl, toss the strawberries and kumquat, make sure you remove the seeds
- Pour the dressing generously over the salad and garnish with mint
- Serve immediately
