Easy and delicious summer recipe using strawberry and kumquat

  • Salad
  • 2 cups strawberries, quartered
  • 1 cup kumquats, thinly sliced
  • Honey Dressing
  • 2 tsp honey
  • 2 tbsp lemon juice
  • 3 tbsp extra virgin olive oil
  • 1 tsp crushed coriander seeds
  • a few sprigs of mint for garnish
  1. In a small bowl, mix lemon juice, oil, honey and coriander seeds, whisk until well combine and set aside
  2. In a large bowl, toss the strawberries and kumquat, make sure you remove the seeds
  3. Pour the dressing generously over the salad and garnish with mint
  4. Serve immediately
