Preheat oven to 350 and set aside

- 2 large eggs, at room temperature
- ½ cup brown sugar, packed
- ½ cup granulated sugar
- 2 cups creamy natural peanut butter
- 1 cup gluten-free quick oats
- 2 tsp baking powder
- ¾ cup dark chocolate chips
- Line a baking sheet with parchment paper and set aside.
- Preheat oven to 350 degrees Fahrenheit.
- In a large bowl, cream together eggs and both sugars.
- Add peanut butter to the egg and sugar mixture. Mix well.
- Fold in quick oats, followed by the baking powder. Mix until all ingredients are well incorporated.
- Fold in chocolate chips.
- Use a small ice cream scoop to drop cookie dough onto a lined baking sheet (it should be about 2-3 tablespoons worth), spacing them out 2 inches between each other.
- Bake for 11-13 minutes. Remove from the oven and allow to sit for a couple of minutes. Remove from pan and allow to cool on a wire rack before serving. Enjoy!
