Easy and delicious chocolate chip peanut butter oatmeal cookies, using only 7 ingredients and ready in less than 20 minutes

Ingredients
  • 2 large eggs, at room temperature
  • ½ cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 cups creamy natural peanut butter
  • 1 cup gluten-free quick oats
  • 2 tsp baking powder
  • ¾ cup dark chocolate chips
Instructions
  1. Line a baking sheet with parchment paper and set aside.
  2. Preheat oven to 350 degrees Fahrenheit.
  3. In a large bowl, cream together eggs and both sugars.
  4. Add peanut butter to the egg and sugar mixture. Mix well.
  5. Fold in quick oats, followed by the baking powder. Mix until all ingredients are well incorporated.
  6. Fold in chocolate chips.
  7. Use a small ice cream scoop to drop cookie dough onto a lined baking sheet (it should be about 2-3 tablespoons worth), spacing them out 2 inches between each other.
  8. Bake for 11-13 minutes. Remove from the oven and allow to sit for a couple of minutes. Remove from pan and allow to cool on a wire rack before serving. Enjoy!
