One Pot Chicken Pasta is one of those easy and tasty meal you can make during the week. It’s called one pot because everything is cooked using a single pot. I prefer to saute the chicken before adding the rest of the ingredients, because to me it taste better that way. It’s a personal preference. We’ve made it a few times since the kids started school. It also reminiscent of my Italian Baked Chicken & Pasta.
With a full calender, it’s imperative for us to adopt an easy weeknight menu. Which is one of the many reasons, I appreciate this recipe. I also love the fact that, it can be customized based on our palate, plus it has grains, lean protein and vegetables. We sometimes swap the pasta for whole grain which is an healthy option. I’ve added mixed vegetables, sometimes I swap the chicken for mushroom, the possibility are endless. For this version, I added wine but it’s okay to skip it, the end result will still be pretty good. One Pot Chicken Pasta
Ingredients
- 2 skinless boneless chicken breasts, chopped
- 2 Tbsp olive oil
- 1 medium sized onion, chopped
- 2 garlic cloves, minced
- 2 cups chicken broth
- 1 cup sweet tomatoes, halved
- 1/2 cup white wine
- 2 cups rotini pasta
- salt and pepper to taste
- 1 cup mozzarella cheese
Direction
- In a large skillet, heat oil add onion and cook till translucent
- Toss in chicken and garlic , cook for about 8 minutes
- Add wine, chicken broth, tomatoes, pasta, salt and pepper
- Reduce heat to medium-low, cook uncover for about 8 minutes
- Stir in mozzarella cheese and cook 1-2 minutes until heated through
- Serve warm
