Easy African Stewed Scrambled Eggs


I use blended pepper sauce in this recipe but tomato sauce would probably taste just as good. The spiciness of the recipe depends on your comfort level.


Easy African Stewed Scrambled Eggs
- 4-5 eggs
- ¼ cup of veggie oil
- 1 small size onion - finely chopped
- 1 clove of garlic - finely chopped
- ¾ cup of blended pepper (combination of red pepper, habanero pepper, tomatoes and onion)
- Salt to taste
- Heat oil in a large skillet over medium
- Add onion and garlic - cook till translucent
- Add blended pepper/salt and fry until all the water has evaporated
- Whisk together the eggs and pour into the stewed pepper
- Stir friendly until eggs are scrambled and cooked through
- Remove from heat and serve warm

You can certainly opt to use olive oil or canola oil, but i am not sure how it will affect the taste. You can try it out and let me know.

Its not too spicy. Yes you can certainly leave the habanero pepper out if you don’t want the extra kick.

This sounds quite good and actually I think I accidentally made something pretty close to this minus the heat (spice) part. I used pace for the tomato part (mild) My husband has cancer and he can eat scrambled eggs easily. I like the idea of it on rice, I hadnt thought of it.
