Recipe | One Pot Chicken and Rice
One Pot Chicken and Rice is a savory and easy weeknights dinner, which is why I enjoy making it for my family. Although it a simple dish the addition of chicken adds a bit of excitement which also gives it an uncanny resemblance to arroz con pollo. The annatto seasoning can be found in the international aisle of your local grocery store.
One Pot Chicken and Rice
- 3 tablespoons corn oil
- 3 cloves garlic minced
- 4 cups uncooked rice
- 1-2 lbs chicken thighs
- A bag of frozen mixed veggies
- 3 chicken broth
- 1 tsp. annatto seasoning
- Salt to taste
- In a skillet, heat oil. Add garlic
- Add chicken thighs with skin down, season with salt, annatto seasoning and sauté for about 8- 1o minutes until lightly browned, drain fat.
- Add chicken broth and bring to a boil
- Add rice, stir and cover with lid
- Reduce heat to simmer, cook for about 20 - 25 minutes
- Add frozen mixed vegetables the last 5 - 8 minutes
- Remove from heat, fluff, and serve

Looks like a tasty and easy recipe. I have never heard of annato spice. I am going to have to go look it up.

This sounds good and so easy! It reminds me of a dish we had growing up, my mom would put all these things in a casserole dish and it could come out delish!
