Buffalo Chicken Salad Recipe

It’s football season. You’re on a diet, and as your husband munches down on breaded buffalo wings dipped in ranch dressing you stare him down as if he stole your lunch money. Okay, so maybe it didn’t quite happen like that but it could. Anyway, since it’s the start of football season, I thought it would be nice to share this easy and guilt-free salad recipe with you. Buffalo Chicken Salad makes sure that scenario doesn’t come to pass because while everyone is indulging on football night you’re enjoying yourself as well. Guilt-free, if I may add.

One of the reasons why I like this salad is the fact that it only utilizes 5 ingredients and that’s including the dressing. I think you will love the fact that it’s no fuss, and can be ready in less than 15 minutes if you used leftover chicken breast like I did.

To make the buffalo chicken, you will need a bowl of cooked and well-seasoned chicken breast, cut into cubes or strips. Or you can purchase one of those prepacked chicken. Toss the chicken in buffalo sauce and you’re good to go. For the dressing, I settled on buttermilk ranch dressing to compliment the salad. This isn’t the first salad, I have shared on here, remember the tostada salad with chipotle dressing. I am slightly obsessed with both salad because they are so good.

I also love how versatile this recipe is, the main ingredient is the buffalo chicken and you can substitute whatever lefty vegetable you see fit. Personally, I like the crisp and juicy texture of romaine hence the reason I opted for it. Adding pepper jack cheese continues the spicy kick you get from the buffalo chicken. It’s great as a main dish or a side dish and if you are into meal planning you can pack the salad for lunch.
Buffalo Chicken Salad Recipe
- 2 cups of chopped Romaine
- 1 cup Buffalo Chicken
- 1/2 cup Pepper Jack Cheese
- 1/4 cup Crispy Tortilla Strips
- 2 tbsp Buttermilk Ranch Dressing
Direction
- Combine your romaine, buffalo chicken, pepper jack cheese and tortilla strips in a large bowl
- Drizzle on some buttermilk ranch dressing and serve.
