Roasted Pumpkin, Gruyère and Spinach Quiche

Roasted Pumpkin, Gruyère and Spinach Quiche. When I decided to make this recipe, I was unsure about my decision to use pumpkin. To my surprise it turned out pretty good. When most people think of quiche, pumpkin wouldn’t come to mind. However, I threw caution to the wind and decided to give it a go.

Quiche is a fairly easy dish to make and one of the reasons why I love it, is because it can be customized a million ways.  I roasted the pumpkin but you will probably get the same result if you saute it.

Roasted Pumpkin, Gruyère and Spinach Quiche

Ingredients
Crust 

  • 1 store bought 9-in pie crust, thawed

Filling  

  • 4 cups of diced sweet pumpkin
  • 1 tablespoon olive oil
  • 1 large red bell pepper, chopped
  • 3 garlic cloves
  • salt & pepper to taste
  • 1 cup chopped baby spinach
  • 2 cups grated Gruyère cheese

Egg Custard   

  • 4 eggs
  • 1  cup half & half
  • salt & pepper to taste

Directions

  1. Preheat oven to 375ºF
  2. Place diced pumpkin, chopped bell pepper, and garlic cloves on baking sheet
  3. Drizzle with olive oil, season with salt and pepper to taste
  4. Roast for 15-20 minutes
  5. Meanwhile, in a medium bowl, whisk the eggs, half & half and season with salt and pepper
  6. Remove pumpkin from oven and let it cool
  7. Combine roasted pumpkin, bell pepper, spinach and Gruyère cheese  in a separate bowl (don’t forget to remove the garlic cloves)
  8. Spread pumpkin and cheese mixture in the prepared pie dish
  9. Pour egg mixture evenly over the filling
  10. Bake in preheated oven for 25-30 minutes or until golden and egg is set
  11. Serve warm or at room temperature

  1. My favorite fall recipe is my healthy apple and onion stuffing with light bread. I also love to make apple crisps!

  2. I start using all my goodies from the garden and make sausage. I know that sounds weird but my mum and I did it when I was growing up, using freeze dried goodies from the garden from all our extras after canning. I make killer chicken, roasted pepper, garlic and various herbs and my meat grinder is HAND CRANKED! So this would be AWESOME!

    My favourite fall recipe is my homemade apple crisp..ever though I cannot eat apples I love to make it and have the house smelling so good, this recipe I’m not sure..pumpkin with spinach sounds weird to me but it does look good though..I may just try and make it
