We’ve had a pretty amazing summer with the kids so it sort of pains me to see it coming to an end. They will be off to school soon which technically means it the end of summer. I’m in denial, and if you’re like me, and you refuse to acknowledge that summer will soon be in our rear view mirror, then this Watermelon-Ginger Crush will help you in savoring the last few days of summer. Well, at least till watermelon is no longer in season, then you’re on your own. It will also be a nice addition to your labor day BBQ. It’s a great all around drink, you can replace the ginger wine with ginger ale for a kid friendly version.   Plus the combination of watermelon and ginger is both tangy and sweet, if you crave a little bit more zing you can add freshly grated ginger to the mix. However, the addition of grated ginger, leaves a warm lingering taste in your throat.

Ingredients
  • 1-1/2 lbs. watermelon
  • 1 cup ginger wine
  • ¼ cup ginger syrup
  • 1 tbsp lime juice
  • crushed ice
Instructions
  1. In a blender, add chopped watermelon, ginger wine, ginger juice, syrup, and lime juice
  2. Blend together until watermelon is completely pureed
  3. At this you can do one of two things, strain and pour over fresh ice and serve
  4. Or, you can add some ice cubes to the mixture in the blender and pulse to crush cubes, this turns it into a slushy
  5. Pour into a glass, garnish with a slice of lime and serve.

You can find ginger wine at specialty liquor stores. If you can’t find the wine, then make a non-alcoholic version, it will taste just as good.
