No Fuss Banana Bread from Scratch
No Fuss Banana Bread. The kids are heading back to school this week. It has been a quick and fun summer break but sadly it’s time to get back to our school routine. One of the routine, I am not excited about is the hectic morning craziness. No matter how we plan the night before, there is always a surprise in the morning.
To give it an extra pizzazz you can add a glaze or for a little crunchy surprise you might want to add chopped nuts or raisins. Even without the glaze or nuts you can still enjoy this right out of the oven. This recipe would also be perfect as a muffin. Have a happy and safe Labor Day.
No Fuss Banana Bread
Ingredients
- 1 3/4 cups all-purpose flour
- 2 eggs
- 3/4 cup brown Sugar
- 3 over-ripe bananas, mashed
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 stick of butter, melted
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 350 degrees. Grease a loaf pan or line with parchment paper.
- In a large mixing bowl, whisk sugar, butter and eggs
- Stir in the dry ingredients – flour, baking powder, salt and cinnamon
- Add the mashed banana and mixed until well combined, be careful not to over mix
- Pour batter into pan
- Bake for about 45 minutes to an hour or until a toothpick inserted in the center comes out clean
- Cool on wire racks until just warm, 10-15 minutes
- Refrigerate leftover banana bread to maintain freshness
