Easy Coconut Sweet

When it comes to Easter dessert for kids, our girls love super easy and cute desserts. This special Easter Coconut Sweet only requires 3 to 4 ingredients. This recipe is popular snack in East Africa and it goes by the name Kashatas. The kids can join in helping you assemble because they will relish in the final result. You can make it without the food coloring but for Easter, we divided the coconut mixture into about 4 portions and added blue, yellow, green and red food coloring so that we can get a nice Easter hue. We also bought some Easter cookie cutter, to complete the look.

Unlike the coconut candy, I shared a few years ago; this recipe doesn’t use shredded coconut or coconut flakes, instead, it uses unsweetened desiccated coconut, although traditionally freshly grated coconut will be best. So if you have time and want to get the real authentic flavor, try freshly grated coconut. At this point, you’re probably thinking, I have stocks in a coconut farm, but to be honest, they make excellent and nutritious dessert or snack. Some might even consider them a superfood but I wouldn’t  go that far.

Easy Coconut Sweet

Ingredients

  • 3/4 stick of butter
  • 2 cups unsweetened desiccated coconut
  • 3/4 cup of sweet condensed milk
  • food coloring of your choice
  • spring sprinkle mix

Instructions

  1. In a medium sized pan, melt the butter over low heat, stirring constantly
  2. Add the coconut and stir till it’s completely mixed
  3. Stir in the condensed milk and if you’re using different food coloring, this is the point where you decide and add food coloring
  4. Mix constantly for about -5-10 minutes
  5. Remove from heat and let it cool slightly
  6. Spread evenly over parchment paper and cut into the desired shape using a cookie cutter.
  7. Let it set for an hour at the minimum. You can serve it as is or decorate with sprinkled sugar
