Coconut Banana Fritters

Malaysian call this Kuih Kodok, which means deep-fried banana balls. In Indonesia, it’a called Pisang Goreng. This recipe also in some weird way reminds me of Akara. Crisp on the outside and tender on the inside, these coconut banana fritters are loaded with a nice combination of sweet banana and coconut – so tasty.
Coconut Banana Fritters
- 4 overripe medium bananas
- ¼ oz packet of instant yeast
- ¾ cup sugar
- pinch of salt
- 1 cup warm water
- 2 cups all-purpose flour
- ½ tsp nutmeg
- ¼ sweet shredded coconut
- oil for frying
- sugar for coating
- In a medium-sized bowl mash, the bananas using a potato masher and set aside.
- In a large bowl, combine warm water, sugar, and yeast and allow to sit for 2 minutes till it bubbles up, then stir together.

- Drop batter by spoonful into the oil and let it fry until golden brown, turning once. Scoop out and drain on paper towel.
