Scotch Eggs – Baked not Fried – It will make a perfect appetizer for Easter. Scotch Eggs is actually an English snack served at most pubs and restaurant in the UK. It somehow made its way to Africa and for the longest time I thought it got its name from Scotland but with a little research I found out there is a long standing debate as to its origin. Some people believe the snack migrated from North Africa then it made its way to Britain via France and now there are various adaptation of it. India has their own version called Nargisi Kofta.

 Nargisi Kofta is made with lamb, various seasoning like curry, turmeric, garam marsala, etc. There is a similar version in Brazil called Bolovo and in the Philippines its called Kwek-kwek.  I grew up eating a real authentic scotch egg which is fried not bake but for this version, I decided to bake it for a healthier option.

Scotch Egg is an easy recipe to make similar to making meatballs; I would describe it like a hard-boiled egg with sausage meatball wrapped around it then coated with breadcrumbs if that description makes sense. There are so many different ways to make Scotch Egg; you can customize it to fit your palette. I like mine with chopped onions, as you can see in the picture below, I also use Panko instead of regular bread crumbs.

Ingredients
  • 1½ lbs of sausage - remove casing - I used hot Italian sausage
  • Breadcrumbs - I used spicy hot panko chipotle seasoned
  • Dash of ground nutmeg
  • Dash of salt
  • Dash of garlic powder
  • Dash of thyme leaves
  • 2 eggs beaten
  • 8 eggs hard boiled
  • ½ cup flour
Instructions
  1. Preheat oven to 400 degrees, line a cookie sheet with parchment paper or foil paper
  2. Boil 8 eggs for about 8 mins
  3. Remove casing from sausage, add chopped onion, ground nutmeg, garlic powder, thyme and salt to taste - mix thoroughly
  4. Remove egg from stove and set in cold water - peel and set aside
  5. Prepare breading - Beat 2 eggs and set aside, Pour Panko breading into a bowl and set aside
  6. Dust your hands with flour then scoop about a tablespoon of sausage and wrap around your egg, make sure the whole egg is covered with the sausage
  7. Dip the sausage-covered egg in the whisked egg, and then coat it with the panko breading
  8. Repeat the process till all your boiled eggs are done
  9. Bake in preheated oven for about 25 mins or until golden brown.
  10. Serve warm or cold - you can eat it by itself or with ranch dressing, some people eat it with applesauce, but I've never tried that combination before.
