Easy African Stewed Scrambled Eggs

Venturing out a bit today by sharing an easy African- style scrambled eggs. This African stewed scrambled egg is similar to traditional scrambled eggs, but this has tomatoes, pepper, and other spices.

I usually make this when we get tired of eating plain scrambled eggs we opt for this version instead. It’s simple enough and can be eaten with just about anything.

I use blended pepper sauce in this recipe but tomato sauce would probably taste just as good. The spiciness of the recipe depends on your comfort level.

Stewed eggs can be paired with boiled yams, potatoes, fried/boiled plantains or bread. Sometimes, I toss the leftovers over rice just because.

Ingredients
  • 4-5 eggs
  • ¼ cup of veggie oil
  • 1 small size onion - finely chopped
  • 1 clove of garlic - finely chopped
  • ¾ cup of blended pepper  (combination of red pepper, habanero pepper, tomatoes and onion)
  • Salt to taste
Instructions
  1. Heat oil in a large skillet over medium
  2. Add onion and garlic - cook till translucent
  3. Add blended pepper/salt and fry until all the water has evaporated
  4. Whisk together the eggs and pour into the stewed pepper
  5. Stir friendly until eggs are scrambled and cooked through
  6. Remove from heat and serve warm
