Summer Fruit and Goat Cheese Crostini

  • 12 slices baguette
  • 4 oz. Joan of Arc Goat Cheese with Cranberry & Cinnamon
  • 5 medium size strawberry, finely diced
  • 1 medium sized peach, finely diced
  • 2 rings of pineapple, finely diced
  • 1 medium sized kiwi fruit, finely diced
  • 2 tsp lemon
  • honey
  • walnut optional
  1. Combine all ingredients except cheese in a glass bowl; toss well.
  2. Spread goat cheese generously on the sliced baguette, top with the fruit mixture and drizzle with honey
  3. Optional: You can put the fruit mixture in the fridge to marinate for at least 30 minutes, to allow the flavors to develop. You can also bake the baguette in the oven for 5 minutes at 350ยบ F if want the bread to be crispy.
