Sunday Indian Omelette

  • 2 cups Onions, minced
  • 1 serano Chilies, minced
  • 2 cups diced fresh Tomatoes
  • 1 tablespoon Turmeric
  • ½ Cilantro washed and roughly chopped
  • ¼ teaspoon Cayenne
  • 4 tablespoon Canola oil
  • 12 eggs
  • Salt
  • Pepper
  1. In a large bowl combine the vegetables slat turmeric, cayenne and mix well. Split into 6 equal parts.
  2. In a small bowl combine to eggs with one part of the vegetables and ix well with a fork
  3. Heat a medium size non stick pan over moderate heat and ½ tablespoons canola oil and heat
  4. Add the eggs and spread evenly. Reduce heat and let eggs cool until it sets
  5. Increase the heat and flip the omelette in the pan and continue to cook for 2 - 3 minutes
  6. Serve
  7. Repeat with the rest of the eggs
