Banana Bread from Scratch
Recipe type: Breakfast
  • 1¾ cups all-purpose flour
  • 2 eggs
  • ¾ cup brown Sugar
  • 3 over-ripe bananas, mashed
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 stick of butter, melted
  • 1 teaspoon cinnamon
  1. Preheat oven to 350 degrees. Grease a loaf pan or line with parchment paper.
  2. In a large mixing bowl, whisk sugar, butter and eggs
  3. Stir in the dry ingredients - flour, baking powder, salt and cinnamon
  4. Add the mashed banana and mixed until well combined, be careful not to over mix
  5. Pour batter into pan
  6. Bake for about 45 minutes to an hour or until a toothpick inserted in the center comes out clean
  7. Cool on wire racks until just warm, 10-15 minutes
  8. Refrigerate leftover banana bread to maintain freshness
