Using a heavy-bottom sauce pan, melt the sugar on medium high heat until it's light brown - being careful not to burn it.
Stir in coconut flakes until they are all cover in the melted sugar.
Let it cool for a few minutes then scoop out and roll into a ball, it will be sticky so dip your hands in cold water to help make it easier. Another option is to scoop it into parchment paper and roll it into a ball either option works.
Serve warm for a chewy coconut candy or cold for a hard candy.
