Scotch Eggs

Ingredients
  • 1½ lbs of sausage - remove casing - I used hot Italian sausage
  • Breadcrumbs - I used spicy hot panko chipotle seasoned
  • Dash of ground nutmeg
  • Dash of salt
  • Dash of garlic powder
  • Dash of thyme leaves
  • 2 eggs beaten
  • 8 eggs hard boiled
  • ½ cup flour
Instructions
  1. Preheat oven to 400 degrees, line a cookie sheet with parchment paper or foil paper
  2. Boil 8 eggs for about 8 mins
  3. Remove casing from sausage, add chopped onion, ground nutmeg, garlic powder, thyme and salt to taste - mix thoroughly
  4. Remove egg from stove and set in cold water - peel and set aside
  5. Prepare breading - Beat 2 eggs and set aside, Pour Panko breading into a bowl and set aside
  6. Dust your hands with flour then scoop about a tablespoon of sausage and wrap around your egg, make sure the whole egg is covered with the sausage
  7. Dip the sausage-covered egg in the whisked egg, and then coat it with the panko breading
  8. Repeat the process till all your boiled eggs are done
  9. Bake in preheated oven for about 25 mins or until golden brown.
  10. Serve warm or cold - you can eat it by itself or with ranch dressing, some people eat it with applesauce, but I've never tried that combination before.
