Coconut Banana Fritters

- 4 overripe medium bananas
- ¼ oz packet of instant yeast
- ¾ cup sugar
- pinch of salt
- 1 cup warm water
- 2 cups all-purpose flour
- ½ tsp nutmeg
- ¼ sweet shredded coconut
- oil for frying
- sugar for coating
- In a medium-sized bowl mash, the bananas using a potato masher and set aside.
- In a large bowl, combine warm water, sugar, and yeast and allow to sit for 2 minutes till it bubbles up, then stir together.
- Add the flour, salt, nutmeg and mashed bananas into the yeast and stir until well mixed. Cover the batter and le
- Heat oil in a deep pot on medium to high heat until 375 °F
- Drop batter by spoonful into the oil and let it fry until golden brown, turning once. Scoop out and drain on paper towel.
- Roll warm coconut banana fritters in sugar and enjoy warm or cold
