Coconut Banana Fritters

  • 4 overripe medium bananas
  • ¼ oz packet of instant yeast
  • ¾ cup sugar
  • pinch of salt
  • 1 cup warm water
  • 2 cups all-purpose flour
  • ½ tsp nutmeg
  • ¼ sweet shredded coconut
  • oil for frying
  • sugar for coating
  1. In a medium-sized bowl mash, the bananas using a potato masher and set aside.
  2. In a large bowl, combine warm water, sugar, and yeast and allow to sit for 2 minutes till it bubbles up, then stir together.
  3. Add the flour, salt, nutmeg and mashed bananas into the yeast and stir until well mixed. Cover the batter and le
  4. Heat oil in a deep pot on medium to high heat until 375 °F
  5. Drop batter by spoonful into the oil and let it fry until golden brown, turning once. Scoop out and drain on paper towel.
  6. Roll warm coconut banana fritters in sugar and enjoy warm or cold
