Sweet and Spicy Jalapeño Chicken Wings

- 2 lbs. Chicken wings, tips removed at joint
- ½ cup olive oil
- 2 tbsp minced garlic
- 2 tbsp grated ginger roots
- 2 tbsp grated jalapeño pepper
- 2 tbsp onion powder
- salt and pepper to taste
- Sweet and Spicy Jalapeñ Glazed
- 1 cup of Coca-Cola Zero™
- ¼ cup of honey
- 3 tbsp brown sugar
- 2 tbsp grated jalapeño pepper
- 1 tbsp corn starch
- 2 tbsp water
- salt and pepper to taste
- Pour olive oil, garlic, ginger, jalapeño pepper, onion powder, and salt over the chicken wings in a resealable bag.
- Mix well and store in the refrigerator to marinade up to 24 hours
- Preheat oven to 425 degrees
- Line a baking sheet with foil and arrange the chicken on the baking sheet.
- Bake for about 30-45 minutes until the skin, rotating halfway to make sure both sides are good
- In the meantime, prepare the glaze by adding Coca-Cola in a medium size saucepan and simmer for about 5 minutes
- Add the jalapeño pepper, honey, and brown sugar.
- Simmer for about 5 minutes, add the cornstarch and water mixture and stir until the sauce thickens
- Toss wings in sauce; remove and arrange on the broiler pan
- Put it under the broiler for 5 minutes
- Garnish with jalapeño pepper
- Serve with leftover sweet and spicy sauce
