Deep-Fried Dough Bites (Puff-Puff)What’s your favorite street fair snack? Mine is Deep-Fried Dough Bites (Puff-Puff). Best described as Africans version of Zeppole. The similarities between recipes from all over the world always amazes me. Puff-Puff is a light and airy deep fried dough popular in Africa and goes by many names, bofrot being one of them. It’s mostly sold on the street corners and you can often go to the market and see the women frying it made to order style.
Puff-Puff (Deep-Fried Dough Bites)

I understand we’re in the middle of summer and offering you deep-fried dough is probably the last thing I should be doing. Yes, it’s not an ideal situation considering we are all trying to fit into our bathing suit but I made these for my daughters camp friends and they loved it, hence me sharing the love today. Be careful though because having one won’t be enough.

Deep-Fried Dough Bites (Puff-Puff)

Ingredients

  • 1 packet of instant dry yeast
  • 3 1/2 of all-purpose flour, unbleached
  • 1-1/2 cup sugar
  • 1 3/4 cups water
  • ½ cup of warm water
  • 5 cups of vegetable oil for deep frying

Instructions

  1. In a small bowl dissolve the yeast by mixing in 1/4 cup warm water (110-115 °F) and 1/2 tsp sugar. Set aside and let it sit for about 5 minutes till foam doubles in size
  2. In a large mixing bowl, combine the dry remaining and mix thoroughly
  3. When the yeast mixture is ready, add it to the dry ingredients
  4. Add the remaining water slowly till you reach the desired consistency
  5. Cover and let the batter sit at room temperature for about an hour or until it rises and doubles in size
  6. Scoop batter into hot oil and fry for a couple of minutes or till golden brown on all sides
  7. Transfer onto a paper towel to absorb the excess oil
  8. You can eat it as is or pour sugar in a paper bag, then add the fried dough, seal and shake to coat evenly
  9. Serve warm or at room temperature
