Vanilla Bean Cookies

These are classic holiday favorite – vanilla bean cookies. They have all the classic flavors we know and love and makes for a great cookie to make at your next holiday gathering or cookie exchange party.

Every time that I find myself thinking about desserts or brainstorming new recipe ideas, I always tend to go with easy and time-tested ones. Those recipes that are simple, uncomplicated and that have become staples in every home. Things like a traditional apple pie, or a chocolate chip cookie, or a great brownie. For me, they are comfort food at their finest (because honestly what’s better than an ooey-gooey, chewy chocolate brownie?).

So as we approach the holiday season and I realize, oops some people might be getting edible gifts this year. I whip up a batch of these, and it serves as my hostess gift as I visit my friends and family. It’s a tried and true comfort desserts that people know and love.

These classic vanilla cookies are just that. Most of the ingredients we are using are things you already have in your pantry. The magic about this recipe and the reason why I’m so excited to be sharing it with you is because it’s really good. It works great with coffees, tea, and hot cocoas. So if you’re looking for a beautiful homemade gift, or a traditional Christmas cookies or something to include as part of a really nice gift basket, this could be it. Double the batch, freeze them so you can have them on hand as a last-minute gift.

Vanilla Bean Cookies

Ingredients

  • 4 cups all-purpose flour
  • 4 butter sticks
  • 2 eggs
  • 2 tbsp vanilla bean paste
  • 2 tsp baking powder
  • 2 cups sugar

Directions

  1. Preheat oven to 350F.
  2. In a bowl, mix the flour with the baking powder and sugar.
  3. Add the eggs (one at a time), butter, and vanilla bean paste.
  4. Stir repeatedly until the batter gets thick and has no lumps left.
  5. Prepare a cookie sheet with parchment paper.
  6. Make small balls with the batter and place in the cookie sheet.
  7. Bake for 15 minutes or until done.
  8. Remove the sheet from the oven and let them cool down.
  9. Serve and enjoy.
