Summer Fruit and Goat Cheese Crostini

Looking for a quick and easy appetizer for your next party? How about this Summer Fruit and Goat Cheese Crostini, you can replace the fruits with whatever is in season, and top it with some walnut for some extra crunch. Ready in less than 15 minutes depending on the type of fruit you choose.

Yum!! This recipe is an old favorite, I usually use cream cheese but this time I replaced the cream cheese with Joan of Arc Fresh Cranberry Cinnamon Goat Cheese and it was divine. We didn’t notice the difference and now I am considering making a traditional cheesecake using goat cheese to see if I can pull it off. Something tells me, it will be a success.

Summer Fruit and Goat Cheese Crostini

Ingredients

  •  12 slices baguette
  • 4 oz. Joan of Arc Goat Cheese with Cranberry & Cinnamon
  • 5 medium size strawberry, finely diced
  • 1 medium sized peach, finely diced
  • 2 rings of pineapple, finely diced
  • 1 medium sized kiwi fruit, finely diced
  • 2 tsp lemon
  • honey
  • walnut optional

Directions

  1. Combine all ingredients except cheese in a glass bowl; toss well.
  2. Spread goat cheese generously on the sliced baguette, top with the fruit mixture and drizzle with honey

Optional: You can put the fruit mixture in the fridge to marinate for at least 30 minutes, to allow the flavors to develop. You can also bake the baguette in the oven for 5 minutes at 350º F if want the bread to be crispy.
