Recipe | One Pot Chicken and Rice

One Pot Chicken and Rice is a savory and easy weeknights dinner, which is why I enjoy making it for my family. Although it a simple dish the addition of chicken adds a bit of excitement which also gives it an uncanny resemblance to arroz con pollo.  The annatto seasoning can be found in the international aisle of your local grocery store.

Ingredients
  • 3 tablespoons corn oil
  • 3 cloves garlic minced
  • 4 cups uncooked rice
  • 1-2 lbs chicken thighs
  • A bag of frozen mixed veggies
  • 3 chicken broth
  • 1 tsp. annatto seasoning
  • Salt to taste
Instructions
  1. In a skillet, heat oil. Add garlic
  2. Add chicken thighs with skin down, season with salt, annatto seasoning and sauté for about 8- 1o minutes until lightly browned, drain fat.
  3. Add chicken broth and bring to a boil
  4. Add rice, stir and cover with lid
  5. Reduce heat to simmer, cook for about 20 - 25 minutes
  6. Add frozen mixed vegetables the last 5 - 8 minutes
  7. Remove from heat, fluff, and serve
