Chicken, Mozzarella and Spinach Panini

So the kids went back to school last week and to ease the pain of an empty house, I bought a Panini Press. Yes, I did. I have lusted after it for some time now and my husband encouraged me to stop window shopping and just go for it. As my family explore the wonderful world of grilled sandwiches; I will try my best to share some recipes with you.

To christen our new kitchen gadget, I went to Walmart to pick up a few items for a quick recipe complete with Summer Refreshments, hence today’s beautiful creation – Easy Chicken, Mozzarella and Spinach Panini with Mangotini Iced Tea.  I bought the Lipton 100 count tea bags and a Hellmann’s Mayonnaise to create a perfect pairing for my easy dinner or lunch menu idea.

I chose everyday ingredients that are readily available to make life easy. Red Onion, Tomatoes, Spinach, Hellmann’s Mayonnaise and Pre-seasoned Chicken (chopped Jalapeño is optional)

I added a chilled tomato and peach soup and freshly brewed Mangotini Iced Tea for a complete meal. I got the recipe for the Mangotini Ice Tea from the Unilever website.

Easy Chicken, Mozzarella and Spinach Panini

Ingredients

  • 4 slices white, whole wheat or rye bread
  • 1 cup shredded seasoned chicken
  • 4 slices mozzarella cheese
  • 4 large fresh Spinach leave
  • ¼ cup finely chopped jalapeño pepper (optional)
  • ¼ cup Heinz mayonnaise
  • 4 teaspoon unsalted butter, softened
  • Salt and Pepper to taste

Direction

  1. Preheat Panini Press while assembling
  2. Place mayonnaise and chopped jalapeño pepper in a small bowl. Stir to combine.
  3. Spread one teaspoon of butter on one side of each side of bread
  4. Spread mayonnaise & chopped jalapeno mixture over the unbuttered side of each of 2 slices of bread
  5.  Arrange the mozzarella cheese, chicken, spinach, tomatoes, and onion. Add salt and pepper to taste. Put the remaining slice of bread on top buttered side up
  6.  Arrange chicken Panini on preheated Panini press and close the lid
  7.  Grill/bake until chicken is warm, cheese is melted and bread is crispy and browned about 2½ to 3 minutes
  8.  Remove from rack and let stand
  9.  Serve warm with Lipton Ice Tea to create a perfect pairing
