 About two weeks ago, we hosted a small gathering with friends where I made Sausage & Pineapple Kebab using Johnsonville Chipotle Monterey Jack Cheese Chicken Sausage.  The best part about the recipe is, it’s easy to put together and it’s flavorful.

Sausage & Pineapple Kebab

  • 1 package of Johnsonville Chipotle Monterey Jack Cheese Chicken Sausage
  • 1 lb. pineapple chunks
  • 1 large sweet red pepper
  • 1 large green pepper
  • 1 small red onion
  • 1/4 cup olive oil
  • 1 tablespoon dried minced onion
  • 1/2 garlic cloves minced
  • 1/4 teaspoon each ground cumin, coriander, & cinnamon
  • Salt to taste

Instructions

  1. In a small bowl, mix oil, minced onion, garlic and spices set aside for basting
  2. Cut sausage, pineapple, peppers and onion into 1-inch pieces
  3. On pre-soaked wooden skewers, alternatively thread the sausage, onion, red pepper, green pepper and pineapple; brush with the seasoning mixture
  4. Grill the kebabs, uncovered, over medium heat for 5 – 10 minutes or until vegetables are tender and sausage has an internal temperate of 165, turning occasionally.
  5. Baste frequently with seasoning mixture

The combination of the spicy chiptole pepper in the chicken sausage and the sweetness of pineapple is perfect.  It’s not too sweet, and it isn’t too spicy.

If you’re thinking of hosting an outdoor party this summer, below are helpful tips that will help in planning a successful party.

7 Tips for Hosting a Successful Outdoor Party

  1. The Location
    If you have a backyard that can accommodate your guest then this will be ideal. If you don’t, consider renting a space at your local park. Some parks has a built-in grill and activities for kids. Don’t forget to have a backup plan in case it rains. You can either rent a tent or be prepare to move the party indoor if it rains. We host a yearly backyard BBQ and to be on the safe side we always order tents. Not only as a preventive measures just in case it rains, but it can also acts as a shade if the weather gets too hot.
  2. Theme
    Decide on a theme, you don’t have to but it’s part of the fun in hosting a party. Besides picking a theme also helps you in decorating the venue. When picking a theme, there are lots of options to choose from based on your style and preference – Hawaiian Luau, Nautical, Barnyard, All American, Carnival, Surf and turf, the list is endless.
  3. The Invite
    Plan ahead, make sure you send it out at least two weeks before the party to allow enough time for your guest to respond. It’s an outdoor BBQ, no need for fancy typography an electronic invitation will suffice.
  4. Perfect Menu
    An outdoor BBQ isn’t complete without the right food. Traditional BBQ food are hamburgers, hot dogs, corn on the cob, coleslaw, potato salad, cold beverages, ice cream sundaes, fruit salad, etc. If you’re up for the challenge, consider making it a potluck. Ask your guest to bring desserts, side dish, drinks or appetizers.  It’s a fun way to get the guest involve; just make sure you’re aware of what everyone is bringing so you can plan the rest of the menu accordingly. Set up it up buffet style and watch as your guest digs in. Don’t forget to stock up on water and lots of extra ice.
  5. Ambiance/Décor
    Since this is an outdoor event, use the natural palette you’ve been given and add items to enhance your surrounds. Depending on your party size, you might have to rent tables and chairs. Also have some extra lawn chair and blankets available just in case. If you have a theme selected for the event, purchase a few decorations that compliments the theme. If you’re having a luau party, consider setting up a tiki bar. Set up tiki torches as lights when it gets dark. I have a small rose bed in my backyard, so I usually pick some fresh roses and use them as my centerpieces. Don’t forget insects’ repellents, citronella candles, and mosquito spray. Also don’t forget to stock up on paper fans to keep your guest cool. If you have a fire pit, plan on setting this up as the party continues late into the evening. Make sure you have chocolate, marshmallow and graham crackers so the kids can make their own s’mores.
  6. Entertainment/Games
    If you’ve pool, you can open it up for the guest to enjoy. Set up a waterside, twister, volley ball net, tug of war; have a few Frisbee on hand. Purchase a soccer ball, hula hoops, ring toss, chess, obstacle course, horseshoe, card games, bowling and supersoakers. If you’ve a karaoke machine bring it out; this could be a fun activity that can be enjoyed by all.
  7. Music
    If your guest are anything like mine, then the music is just as important as the food. Make sure you have a wide selection. If your budget allows, consider hiring a DJ.
